And I mean it too! Dinner will be ready in under 30 minutes, which makes it perfect for a weeknight meal or meal prepping. In addition to my stir fry being incredibly easy and quick to cook it’s also very inexpensive to make! Furthermore, you can feel good about the ingredients. This recipe is packed full with nutritious vegetables and that’s absolutely something to feel happy about!

Ingredients

  • 1 tablespoon butter or oil
  • 1.5 lbs chicken breast cut into bite sized pieces
  • 1 large onion sliced thin
  • 1 1/2 tablespoon chili garlic sauce
  • 2 zucchini chopped into thick half moons
  • 1 bell pepper sliced thin
  • 15 oz. can baby corn
  • 8 oz. sliced water chestnuts
  • 10 oz. bag frozen broccoli
  • Good & Gather 12 oz. sesame teriyaki sauce
  • 1 tablespoon cornstarch
  • 1/2 cup chicken or vegetable broth

Directions:

  1. Preheat skillet or wok over medium high heat for about 30 seconds. Add butter or oil and let it heat for another 30 seconds. Add chicken and sliced onion to the pan. Stir frequently.
  2. Once chicken is mostly cooked, add chili garlic sauce and stir to coat. Toss all of your veggies into the pan.
  3. Pour sauce into pan and stir distribute sauce evenly. Combine cornstarch and broth to make a slurry and add it to the pan. Mix very well.
  4. Allow pan to come to a full boil before reducing heat to low. Cover and simmer for 5 minutes.
  5. Mix well and serve!
  6. Enjoy!
