Tuna Salad just might be the answer to all your food related problems.
Clearly I’m being a bit dramatic but hear me out! Undoubtedly this is the time of year that people really get into eating lighter meals, myself included. Therefore a great way to make our garden salads more exciting is by adding a scoop of tuna salad on top! Additionally it’s inexpensive to make a large batch so it’s perfect for meal prepping on a budget! Furthermore it’s so quick and easy to make a batch! So it’s the perfect recipe to make for an Easter celebration.
Ingredients
- 24 oz canned solid white albacore tuna
- 2 shallots, finely chopped
- 2 celery stalks, finely chopped
- 3 kosher dill pickle spears, cut down the middle and chopped
- 6-8 tablespoons mayo
- 1 teaspoon pickle juice
- 1/2 pepper
- 1/4 teaspoon ground mustard
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Tortillas (for the activity)
- Favorite sliced cheese (for the activity)
Directions:
- Open and drain cans of tuna. Transfer tuna into a large mixing bowl and break up the pieces using a fork.
- Chop and add shallots, celery, pickles to the mixing bowl.
- Now it’s time to add the mayo. Add mayo a little bit at a time, tasting as you go to make sure it’s to your preference! Mix well.
- Add the pepper, ground mustard, garlic powder and cayenne to the mixing bowl. Mix well to make sure the seasonings get distributed evenly.
- Store in an airtight container and refrigerate for up to 5 days!
- Enjoy!
Easter Pinwheels App Activity:
- Lay a tortilla flat and spread an even layer of tuna salad across the entire tortilla. Make it as even as possible.
- Take a slice of cheese and cut it in half. Place it towards the bottom half of the tortilla. Feel free to add a little bit of fresh pepper here!
- Starting from the bottom of the tortilla begin to roll it upwards keeping your grip controlled and your roll even! Using a sharp knife cut the wrap into uniform sized pinwheels.
- Plate your pinwheels and serve!
Notes:
