This Breakfast Quesadilla is going to be your new favorite part of the morning!
I’ve mentioned before that sweets for breakfast really isn’t my thing. However I do make an exception for my Brown Sugar & Cinnamon Waffles. On the days that I’m looking for something else I make these Breakfast Quesadillas! My family and I absolutely love these and I’ve been making them with Carb Balance Tortillas so they’re low carb too!
Ingredients:
- 6 Eggs
- 6 Slices of bacon
- 1 tablespoon water
- 1 tablespoon olive oil
- Your favorite cheese
- 3 Generous handfuls of spinach
- 3-4 large tortillas
- Hot sauce (optional)
Directions:
- Using my the best way to cook bacon method, cook your bacon!
- Crack the 6 eggs into a bowl, add water and whisk until eggs are a little frothy
- Add oil and spinach to frying pan and cook over low heat until spinach has slightly cooked down. About 2 minutes.
- Pour the bubbly eggs over the spinach and continue to cook on low heat. Stir occasionally until eggs are scrambled and mostly cooked!
- Top the eggs with cheese, turn heat off and cover for 2 minutes.
- Mix well to make sure cheese is evenly distributed. Cover to keep eggs warm.
- Preheat another frying pan over medium-low heat for about 1 minute and spray a little nonstick spray. Add tortilla to pan and fill with eggs, bacon and your choice of hot sauce, be sure to place everything on one side of the tortilla.
- Once tortilla’s bottom side has color fold and hold closed for about 30 seconds. Flip quesadilla and cook for another 30 seconds.
- Repeat the process until all quesadillas are made!
- Enjoy!
Notes:
- Silicone tipped tongs are super helpful when checking the tortilla!
- I love using Swiss cheese for this recipe!
- This usually makes either 3 over stuffed quesadillas or 4 perfectly stuffed quesadillas!
- You can easily make just 1 quesadilla! Just adjust the ingredients to 2 eggs, 2 pieces of bacon, 1 tortilla and 1 handful of spinach!
