My Quick & Easy Breakfast Pizza is the perfect way to spice up the most important meal of the day!
I think most of can agree that routines provide comfort and structure to our lives that help us succeed everyday. However a big part of routines is our meals and what we eat for them! Although routines are a great thing having the same thing for breakfast each and everyday is bound to get old and boring. That’s when the routine to rut kicks in and decreases appetites. So if you’re feeling really tired of your usual breakfast here’s an exciting option for you! In addition to this being a quick & easy breakfast pizza to cook, it’s also healthy and delicious!
Ingredients:
- 1 tortilla
- 2 eggs
- Your favorite cheese
- 1 avocado
- Hot sauce
- Everything bagel seasoning
Directions:
- Crack eggs into a bowl and add a splash of cold water or milk. Whisk till frothy.
- Spray pan with a little nonstick spray. Cook eggs over low heat. Once you start to see cooked eggs forming add the cheese. Using a silicone spatula fold and mix the cheese into the eggs. Remove from pan when eggs are fully cooked.
- Add a little more nonstick spray to the pan and toast tortilla on both sides.
- While your tortilla is getting crispy, slice avocado in half and remove the pit.
- Once tortilla is how you like it remove from pan. Take one of the avocado halves and scoop all the goodness onto the tortilla. Using a fork mash and spread the avocado all over the tortilla. Layer the cheesy scrambled eggs on top of avocado.
- Slice up the rest of the avocado and place right on top of the eggs. Top with hot sauce and everything bagel seasoning. Make little pizza slices or eat it as is!

Notes:
- I like to use equal parts of sharp cheddar and mozzarella for my breakfast pizzas. It adds the perfect amount of flavor and creaminess.
- I buy the Great Value Everything Bagel Seasoning and it is delicious!
