This time of the year can be tricky for a lot of us. Getting used to the holidays being over, kids being back to school and adapting to winter time schedules can require quite the adjustment period. Having quick and easy to make recipes in your rotation is a huge help making the transition go smoother. And here is a recipe to add to your rotation!
To make sure your coleslaw is thoroughly chilled and stays crisp, mix up your coleslaw ahead of time! I recommend allowing the coleslaw to chill, at least, the entire time the mini subs are being prepared and cooked.
Ingredients:
- Mini sub rolls
- 2 1/2 cups coleslaw mix
- 1/3 cup mayo
- 1 teaspoon sugar
- 2 teaspoons rice vinegar
- 1 tablespoon of butter
- 1.5-2 lbs lean ground beef
- 1/2 diced red onion
- 2 tablespoons chili garlic sauce
- 3 tablespoons hoison sauce
- 2 tablespoons soy sauce
- 2 tablespoons Oyster sauce
- 1/2 teaspoon gochugang
- 1/4 cup beef broth
- 1 tablespoon cornstarch
Directions:
- Prepare coleslaw by adding coleslaw mix, mayo, sugar and vinegar into a food container with lid. Mix well and secure with lid. Store in the fridge.
- Over medium high heat melt butter and once pan is hot add the ground beef. Don’t break it up yet, cook until browned and a little crispy. Flip the meat. Once the meat is browned on both sides it is time to break it up!
- After breaking up the ground beef add the red onion, give a good mix and cook till onions become tender. About 3-5 minutes. Stir occasionally.
- While waiting, add all sauce components together mix everything together and then add it to the beef when ready. Stir well to distribute sauce evenly.
- Preheat oven to 350°F.
- Add cornstarch to beef broth and give a good mix. Pour over meat and mix well.
- Once pan comes to a boil reduce heat to low, cover and simmer until meat is coated in a thick sauce. About 3-5 minutes!
- Toast your mini sub rolls in the oven till they’re toasted to your liking.
- Stuff mini subs with Korean BBQ, top with coleslaw and serve!
