Celebrate this Valentine’s Day with this romantic salad that’s topped with juicy chicken, sweet strawberries, creamy goat’s cheese and candied pecans.
Valentine’s Day has a tendency to be targeted at couples. And that can make people feel left out or lonely. So I’m going to say it; Valentine’s Day isn’t just for people in relationships! It is also a day between friends, family and oneself. So this Valentine’s Day take the time to express yourself to all your loved ones. And most importantly take the time to show yourself some love and appreciation!
Ingredients:
- Spring mix salad
- Julienne carrots
- 2 Chicken breasts marinated in Italian dressing
- 1 tablespoon butter or oil
- Adobo
- 6 Sliced strawberries
- Candied Pecans
- 4 oz. Goat’s cheese
- Your favorite salad dressing
- Pickled onions ( optional )
Directions:
- Marinate chicken breasts in Italian dressing for at least 1 hour. Flipping the chicken halfway through.
- Preheat oven to 350°F. Once oven is ready bake chicken breasts for 15 minutes with the dressing still in your baking dish. After the 15 minutes flip chicken breasts and bake for another 15.
- Remove from oven. Melt butter or oil in pan. Season chicken breast with Adobo. When pan is hot add the chicken breasts and sear 5-6 minutes and then flip and sear for another 5-6 minutes. When your chicken reaches an internal temp close to 160°F remove from heat and allow to rest. The chicken will continue to cook while it rests. Chicken is safe to eat at 165°F.
- While chicken is resting use this time to slice strawberries and break up goat’s cheese.
- In a large bowl add your salad mix and carrots. Dress and toss your salad.
- After 10 minutes slice your chicken breast into thin pieces.
- Make your plate by starting with the salad and top it with the chicken, strawberries, candied pecans and goat’s cheese!
- Enjoy!
Notes:
- This is recipe is for 2 large salads but can easily be adjusted to make more or less!
- You don’t have bake and sear the chicken, you can choose one option and just cook the chicken that way. Do what’s easier for you!
