Light + Fresh Cucumber Salad

Ditch your typical Mother’s Day salad and shake things up a bit by making my Light + Fresh Cucumber Salad!

Feta cheese

Eating healthy can seem boring and bland a lot of them time. And in my opinion feeling bored and uninterested in our healthy options is not a great way to stick to our health and diet goals. So, if you’re feeling tired of your usual healthy recipes take that as a sign to try something new! What makes this salad so great is that it’s delicious all on it’s own. But top it with some blackened salmon, grilled chicken or crispy chickpeas and your taste buds, and health, will be thanking you!

Black olives & Red onion

Ingredients:

  • 2 English cucumbers
  • 2 cups shredded carrots
  • 1/2 red onion
  • 6 oz. feta cheese crumbles
  • 2 2.25 oz. cans of sliced black olives
  • Your favorite dressing
  • 1/4 teaspoon black pepper
Cucumber salad

Directions:

  1. Rinse and dry cucumbers then cut off then ends and vertically slice right down the middle. Cut the cucumber halves into spears then chop. Add chopped cucumber into a large bowl.
  2. Measure out shredded carrots and then add them to the bowl.
  3. Finely chop red onion and toss it into the bowl.
  4. Open and drain black olives then add them to the bowl.
  5. Add Feta cheese crumbles.
  6. If serving it right away add salad dressing and black pepper. Toss the cucumber salad well to make sure dressing is evenly distributed. If not transfer the cucumber salad into a storage container, without dressing it, and refrigerate till ready to serve!
  7. Enjoy!

Notes:

  • Instead of using store bought dressing I like to drizzle extra virgin olive oil, add red wine vinegar to taste and fresh lemon juice to the cucumber salad! It’s so simple and so delicious!
