My Lemon Chicken & Vegetable Soup is a twist on well loved classic chicken noodle soup!
Traditional chicken noodle soup will always be one of my favorites. Especially this time of year when it’s so cold out. And a bowl of my lemon chicken and vegetable soup is just as comforting and satisfying! Although it has no noodles I promise that you won’t be missing them! My brother says he actually prefers it this way because there’s more chicken! Plus lemon makes everything better!
Ingredients:
- 2 chicken breasts, cooked and shredded
- Adobo, or salt and pepper
- 1 tablespoon oil or butter
- 1 small yellow onion, finely chopped
- 8 oz. sliced mushrooms
- 12 oz. frozen carrots
- 1 lemon, zest and juice
- 1 teaspoon minced garlic
- 6 cups chicken broth
- 1-2 cups water
- 1/4-1/2 teaspoon turmeric
Directions:
- Decide which pot you’ll use to make the soup and preheat it over medium high heat. After about 30 seconds add tablespoon of oil or butter and let it warm up. About 30 more seconds.
- Season both sides of chicken breast with adobo and put in the pot. Cover and cook for about 8-10 minutes. Flip the chicken, cover and cook for another 8-10 minutes. I like to remove my chicken when it is close to 160°F. It will continue to cook as the chicken rests. Chicken is safe to eat when it reaches 165°F. Let chicken rest, cool and then shred!
- Take this time to finely chop the onion, slice the mushrooms and zest and juice lemon.
- Now it’s time to deglaze the pot! Pour just enough of broth to cover the bottom of your pot and let it come to a simmer over medium heat. Stir to make sure your blending fond* into the broth. There is so much flavor there!
- Add onion to the pot and increase temperature to medium high. Stir frequently. Once the onions begin to look translucent, about 2-3 minutes, add the mushrooms and carrots. Once the veggies have absorbed most of the broth add lemon zest and minced garlic. Stir thoroughly.
- Add the chicken, broth and water to the pot. Add salt, pepper and turmeric to taste. Simmer for 15 minutes.
- Start by adding the lemon juice a little at a time. Tasting as you go till you reach your desired level of lemon flavor!
- Serve and enjoy!!
