These Healthy Chicken & Veggie Wraps are proof that you don’t have to sacrifice flavor for a healthy meal!
And I mean it too! These healthy chicken & veggie wraps won’t leave you unsatisfied. They’re packed with protein, veggies and flavor. It’s seriously a meal you can feel good about eating! Pair it with some sweet potato french fries, recipe coming soon 😉, and it’s a match made in heaven!
Ingredients
- 2 chicken breast
- 1/3 cup Italian dressing
- Black pepper
- Onion powder
- Garlic powder
- 1 lemon,
- 1 bell pepper, thinly sliced
- 1/4 red onion, thinly sliced
- Dark greens
- 4 slices of your favorite cheese
- 4 low carb wraps
Directions:
- Fillet the chicken breasts and place in a freezer bag or container. Squeeze the lemon and add the juice to the chicken. Then add Italian dressing.
- Marinate chicken for at least 2 hours. Flipping the chicken halfway through for even marination.
- Preheat oven to 350°. Place a wire rack into a sheet pan. If you don’t have a wire rack line a sheet pan with aluminum foil. Put the chicken onto the sheet pan and generously season each piece of chicken. Bake the chicken till fully cooked, about 20-25 minutes.
- While the chicken is cooking prep and slice up your veggies. Let chicken rest for 5 minutes
- Once chicken is done resting slice it into thin pieces.
- Now it’s time to build the wraps! I like to assemble my wraps in this order; cheese, dark greens, red onion, bell pepper and then chicken. Then I fold in the sides of the wrap and start rolling from the bottom. Super easy!
- Once all your wraps are assembled it’s time to dig in!
Notes:
- I like to slice my cheese in half and then layer it so you get cheese throughout the entire wrap!
