Making Zucchini “Pasta” Salad has to be one of the easiest ways to transform zucchini into a deliciously healthy summer time dish.
Now I am not going to lie to you, it is not exactly like eating traditional pasta salad. Because it isn’t! And that’s okay! With that said it’s still an awesome substitute, especially if you’re trying to eat less carbs. It has all the familiar components that we all love about pasta salad, minus the pasta! The addition of the zucchini noodles makes it an incredibly fresh and nutritious experience. Just like regular pasta salad, my zucchini pasta salad goes well with any protein! Steak tips, BBQ chicken, grilled salmon and even roasted chickpeas!
Ingredients:
- 2 zucchini, spiralized
- 1/3 cup red onion, finely chopped
- 2 cups shredded carrots
- 1 cup sliced grape tomatoes
- 2.25 oz. can black olives
- 1 cup shredded parmesan cheese
- Italian dressing
- 1/4 teaspoon black pepper
Directions:
- Using a hand or tabletop spiralizer, spiralize your zucchini into spaghetti shaped noodles. Cut your zoodles into shorter pieces when getting to long. Add zoodles to a large bowl.
- Add red onion, carrots, tomatoes, black olives and parmesan cheese. Thoroughly toss everything together.
- If serving now dress salad and add black pepper. Toss again and it’s ready to be served.
- If not serving right away, without dressing, transfer everything to a container and store in the fridge for up to 5 days.
- Enjoy!

- I use the OXO tabletop spiralizer! I got mine on sale at Target a few years ago and I definitely recommend it!
