Easy Pasta Florentine with Chicken is a go to for me when pasta is calling my name and I need dinner made quickly. It’s inexpensive to make, full of flavor and has veggies in it!

In addition to all that goodness, this recipe makes a generous amount of food. So whether you’re feeding a crowd or meal prepping for the week, there will be plenty to go around!


Ingredients:
- About 1.5 lbs chicken
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1/2 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon oregano
- 1 teaspoon minced garlic
- 1/2 teaspoon pepper
- 5 oz. baby spinach
- 14.5 oz can diced tomatoes
- 1/2 cup chicken broth
- Box of your favorite pasta, I’m using angel hair
- Mozzarella or Parmesan cheese

Directions:
- Boil water for pasta while doing the following steps.
- Cut chicken into bite sized pieces and toss them into a bowl. Drizzle 1 tablespoon olive oil and 2 tablespoons red wine vinegar over chicken pieces, mix. Season the chicken with onion powder, garlic powder, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper. Mix well. If possible let chicken marinate for at least 1 hour.
- Heat a pan over medium high heat, add 1 tablespoon olive oil. Cook chicken, mixing occasionally to make sure it cooks evenly. Once chicken is mostly cooked, add minced garlic, baby spinach and diced tomatoes. Mix well. Add 1/2 teaspoon salt, 1/4 teaspoon pepper and a sprinkle of oregano. Mix and simmer for 5 minutes.
- At this point the pasta water should be boiling. Cook pasta till al dente. Drain pasta. Add pasta back to pasta pot.
- This step is optional! I like to drizzle a little olive oil and red wine vinegar, or Italian dressing over the pasta to prevent the pasta from sticking together. Gently mix to coat pasta.
- Add pasta to sauce, mixing as you go to make sure all the pasta is being tossed in sauce.
- Top with a little Mozzarella or Parmesan cheese and serve!
- Enjoy!

Notes:
- You don’t have to mix the pasta into the sauce! You could always serve it over the pasta, do what’s easiest for you!
- Do not drain the can of diced tomatoes!
