Did you know that sweet potatoes contain a tremendous amount of vitamin A? And vitamin A helps support healthy eyes, immune systems and gut health. So do yourself a favor and make a batch of my Creamy Mashed Sweet Potatoes, your taste buds and body will thank you!
In addition to being a great source of essential nutrients, sweet potatoes taste really really good! Furthermore sweet potatoes pair so well with other healthy options. Salmon, grilled chicken, air fryer brussels sprouts, roasted chickpeas are a few of my favorites!
Ingredients + Tools:
- 3 large sweet potatoes
- 1/4 cup warm milk, I use almond milk
- 1/4 cup cottage cheese
- 3 tablespoon softened butter
- 1/2-1 teaspoon ground cinnamon
- Salt and pepper to taste
- Maple syrup or honey ( optional )
- Immersion blender
Directions:
- If leaving the sweet potato skins on, take this time to rinse and scrub the skin. If not, take this time to peel the sweet potatoes.
- Cut potatoes into uniform sized pieces and toss them into a pot. Cover with cold water, bring to a boil and cook till tender. 10-12 minutes depending on how large you cut the potatoes.
- Drain the water from the pot. Add milk, cottage cheese and butter. Using an immersion blender, mix everything together till smooth and creamy.
- Fold in cinnamon, salt and pepper. Taste to make sure it’s as seasoned as you like.
- Top with a little maple syrup or honey to bring out the natural sweetness. Or not, this is completely optional!
- Serve and enjoy!

- This recipe makes enough to feed my family of 6 with no leftovers.
- I like to drizzle maple syrup or honey on individual servings and not the entire batch.
