GF Brown Sugar & Cinnamon Waffles

Like a lot of other people I’m not always in the mood for something sweet for breakfast. Although every once in a while I wake up wanting something sweet and savory to go with my morning cup of coffee. On those days I make these waffles, and they really can’t be beat!

Honestly these waffles are just so good and they go extremely well with other breakfast staples! Eggs, hash browns, sausage and oven cooked bacon paired with these waffles seriously create the ultimate breakfast experience. And I’m not exaggerating at all! Just give these shot and you’ll see! If you need further convincing these are also gluten free and can be frozen and reheated so they’re perfect for meal prepping!

Ingredients + Tools:

  • 2 cups gluten free flour, I like Bob’s red mill because it contains Xanthan gum
  • 3 heaping teaspoons ground cinnamon
  • 4 teaspoons baking powder
  • 3 large eggs
  • 1/3 cup brown sugar
  • 1/2 cup grapeseed oil
  • 1 teaspoon vanilla extract
  • 1 3/4 cup almond milk
  • pinch of salt (optional)
  • Waffle maker that’s the one I have
  • silicone spatula
  • Ice cream scoop or ladle

Directions:

  1. Preheat waffle maker.
  2. In a large mixing bowl add gluten free flour, ground cinnamon, baking powder and a pinch of salt and mix everything together.
  3. In a separate medium mixing bowl add eggs, grapeseed oil, brown sugar and vanilla extract and whisk everything together.
  4. Pour the wet mixture over the dry mixture and stir together till most of the dry mixture looks wet. Add your almond milk in stages and whisk everything together till it’s fully incorporated.
  5. At this point your waffle maker should be ready to go, lightly spray molds with cooking spray and add batter to the waffle maker. I like to use a silicone spatula to make sure the batter is smooth. Remove waffles when they are cooked completely, my maker has a timer that goes off.
  6. When all the waffles are cooked it’s time to make a plate! Dress up your waffles with your favorite toppings! I like to top mine with softened butter, warm syrup and fresh fruit!

Now doesn’t that look delicious? I have a Belgian waffle maker and this recipe makes 6 waffles!
